This simple and delicious chocolate cheesecake is a perfect combination of decadent cheese cream and crunchy crust. This easy dessert melts in your mouth.
Ingredients for the base:
- 250 g crushed digestive biscuits,
- 170 g unsalted butter,
- 30 g cocoa powder,
- 70 g powedered sugar.
Ingredients for the filling:
- 150 g dark chocolate,
- 150 g milk chocolate,
- 500 g cream cheese,
- 70 g powedered sugar,
- 250 ml whipping cream,
- 5 g gelatin powder,
- 30 ml water.
Grease and line the base of a 20 cm (8 inch) round springform pan. Add a parchment paper circle to the bottom of springform pan.
Prepar the base: In a large bowl mix the crushed biscuit with melted butter, cocoa powder and with sugar. Press the mixture into prepared springform pan, using the back of a spoon. Freeze 20 – 30 minutes.
Prepare the chocolate cream cheese mixture:
Dissolve gelatin in 30 ml of cold water and let it swell for 10 minutes. Melt the dark chocolate, and milk chocolate. Mix cream cheese with melted dark chocolate and milk chocolate, add the powdered sugar. Place gelatin over low heat just until dissolve and incorporate in cheese mixture. Whip the whiping cream in a large bowl and incorporate into the chocolate cream cheese mixture. Spoon the mixture over the crust and refrigerate for about 4 hours or overnight until set.
